Tzatziki Sauce (Vegan)

Who doesn’t love an easy, fresh cucumber sauce made with just a few simple ingredients?

I finally made gyros again with Vegan Gyro “Meat” (TVP) and dialed in this tzatziki sauce recipe. This comes together quickly with mostly simple pantry items that are easily kept on hand.

Use half a cucumber to shred for the sauce and the other half to slice for the Gyros.  If you are able to plan ahead, make this a day in advance as the flavors meld nicely when the sauce is left overnight.

INGREDIENTS
  • 1 cup boiled cashews
  • ¾ cup water
  • 1 tsp garlic powder
  • ½ tsp apple cider vinegar
  • ¼ tsp salt (divided)
  • ½ large cucumber (shredded)
DIRECTIONS
  1. Boil 1 cup of cashews for 10 minutes and add to a high-powered blender.
  2. Add next four ingredients and ⅛ tsp of salt to the blender.
  3. Blend for 10 minutes. Scrape bits of cashew from the sides back down into the liquid as needed.
  4. Meanwhile, shred half a cucumber, spread it out on a cutting board, and sprinkle it with remaining ⅛ tsp of salt.
  5. Press the water out of the shredded cucumber with a paper towel. Ring out the paper towel and repeat until most of the liquid is removed.Add shredded cucumber to a pint jar and pour blender contents over the cucumber shreds. Mix it together with a spoon.
  6. Cool in the refrigerator and serve.
