Corn Salsa

A simple, fresh salsa that comes together with simple ingredients for wraps or healthy snacks.

This can be used in a range of dishes. It can elevate any wrap or bowl. It makes just enough salsa to fit a pint canning jar. The salt, lime juice, and lemon juice act as preservatives. So, you can pop this in the refrigerator and use it for several meals over the course of a week or two or longer. Though, it’s unlikely you’ll put that to the test.

I added this to a wrap with Twice-Fried Tofu Patties, lettuce, tomato, and vegan mayo. It was a delightful way to freshen up the fried tofu.

INGREDIENTS
  • 1 can corn (drained and rinsed)
  • ½ red onion (diced)
  • 1 seeded jalapeño (diced)
  • ½ cup chopped cilantro
  • 1 TBSP lemon juice
  • 1 TBSP lime juice (or juice squeezed from half a lime)
  • ¼ tsp salt
DIRECTIONS

Stir all ingredients together in a bowl and enjoy immediately or store in a canning jar. Easy peasy.
