Pickled Red Onions

Made with a handful of simple ingredients, these add flare to bowls, salads, and sandwiches.

Make a jar of these whenever you have a little free time. If you can slice onions, heat water, and mix a few ingredients together, you can make this in no time. You’ll have a great condiment to jazz up a variety of dishes. Or eat them on their own.

I keep canning jars on hand and picked up some reusable plastic lids that I use over and over. Try this once and you’ll be a big fan. In my household of three, these are gone in a week or less.

I use the pickling juice to make an addictive salad dressing. Watch for that recipe soon.

INGREDIENTS
  • 1 red onion (halved and sliced)
  • ¾ cup white vinegar
  • ¼ cup hot water
  • 1 TBSP sugar
  • 1 tsp salt
DIRECTIONS
  1. Heat ¼ of water in the microwave and add to a pint canning jar
  2. Add salt and sugar. Stir to dissolve
  3. Stuff jar with sliced red onion
  4. Top off with white vinegar
  5. Screw cap on jar and allow to sit overnight
  6. Enjoy
