French Toast Bagels

Missing donuts since going vegan? This delightful option is somewhere between French toast and donuts.

This recipe comes together easily with mostly common ingredients that are easy to keep on hand. You only need one bagel per serving. But you may want more. This recipe makes 3 servings. Double it if you want to make all six bagels that come in your standard half dozen. I recommend sesame seed bagels, though plain bagels work well—maybe even cinnamon raisin.

For best results, use a non-stick pan and allow the French toast bagel to fully brown before disturbing it.  Give it four minutes before flipping the bagels. Use the spatula to carefully keep as much crust on the bagel halves as possible.

INGREDIENTS
  • 3 bagels
  • ½ cup cashews (boiled)
  • 1 cup oat milk
  • 1 TBSP chia seeds
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 TBSP melted vegan butter or refined coconut oil
  • 1 tsp maple syrup
DIRECTIONS
  1. Slice bagels in half
  2. Boil cashews for 10 minutes
  3. Drain cashews
  4. Add cashews to blender with remaining ingredients and blend for 5-10 minutes
  5. Pour into a shallow bowl
  6. Preheat non-stick pan(s) or skillet over medium heat
  7. Spray with cooking spray
  8. Dip halved bagels into the French toast liquid
  9. Add bagel halves to pan(s) or skillet
  10. Fry each side (four minutes per side or until each side is toasted)
  11. Serve and enjoy. Top with butter and syrup if desired
