Fried Mashed Potatoes

Do you feel like hashbrowns for breakfast but want something less fussy? Look no further.

I’ve been trying to make good hashbrowns for years, but, after numerous attempts and fuss, I would end up with hashbrowns that weren’t cooked through enough or were too dry or too oily or weren’t crispy enough. They always seemed like too much hassle for too little enjoyment.

I made some delicious mashed potatoes the other day and wondered whether I could just press them out on a skillet with some oil and make breakfast potatoes that way. I wondered whether I would need a binding agent to hold them together, but I simple is better if it works. So, I decided not to worry about that unless I needed it.

As it was, the fried mashed potatoes turned out great with very little effort. I divided a tablespoon of refined coconut oil between a cast iron griddle and skillet. I pressed the mashed potatoes out over those surfaces, and let them cook undisturbed for 5 minutes on each side.

INGREDIENTS
  • 6-8 medium Yukon Gold potatoes (about 2 ¼ lbs), quartered and boiled with the skin on
  • ¼ cup Vegan Ranch Dip or Creamy Chipotle Dip
  • 2 TBSP vegan butter
  • ¼ tsp salt
  • 1 TBSP refined coconut oil
DIRECTIONS
  1. Heat enough water in a large pot to cover six quartered potatoes (when added).
  2. Meanwhile, quarter the 6 potatoes
  3. When the water is boiling, add the quartered potatoes and boil for 10-15 minutes (until fork tender).
  4. Drain the potatoes and add them to a mixing bowl
  5. Add the Vegan Ranch Dip, vegan butter, and salt
  6. Mash the potatoes with a potato masher until creamy. They don’t need to be perfectly smooth.
  7. Heat your cooking surfaces and add the refined coconut oil. You could fit this all on one large griddle, but I would recommend heating a skillet also for more room to work if you have that option.
  8. Press out the mashed potatoes over your cooking surfaces, forming a ½-inch thick layer.
  9. Cook undisturbed for 5 minutes.
  10. A crispy brown skin will have formed on the underside by this time.
  11. Use your spatula to cut squares that you can flip. Use a large spatula if you have one.
  12. Cook on the other side for 5 minutes.
  13. Serve and enjoy!
