Vegan Vodka Sauce

The pizza/pasta sauce and cashew cream recipes are easy to make and versatile. They can be used in a range of recipes. So, I make them often. You can use the pizza/pasta sauce for pizza, spaghetti, vodka sauce, etc. You can use cashew cream to replace heavy cream and to make cheezy sauces. I made 10+ servings with this recipe and 17 ounces of pasta.

Make this once, and you’ll make it again and again. I like to top the pasta with roasted vegetables, especially roasted asparagus. You can add vegan sausage crumbles.

If you want to simplify the recipe even further, you can use canned/jarred spaghetti sauce. But the building block recipes are amazing and easy to make. So, I recommend following the directions exactly.

If you’re feeding enough people, mix the sauce with 16-17 oz of pasta. For any leftovers, keep the sauce and pasta separate. You can keep them in the same dish, but try to keep them separate so the pasta doesn’t soak up all the sauce.
