Red Onion Gravy

This savory gravy packs the umami punch you crave, and it’s so easy to make!

This simple recipe comes together easily in very little time. Slice and sauté your onions with a few dashes of Maggi and ponzu sauce until they’re lightly caramelized. Prepare 2 cups of broth. Combine the onions, broth and molasses in a high-powered blender. Reduce in a pot with refined coconut oil and add up to 1 TBSP of cornstarch. Voila! It’s ready for prime time.

Use it to smother roasted vegetables. Mix it with rice and beans or top your baked or mashed potatoes. Mix in mixed vegetables and diced tomatoes to make a stew. Use more or less onions and cook down to your desired thickness. Use as little as one red onion if you’re looking for a thin sauce. This one’s a big winner in my household. We’ll be making it again and again.

INGREDIENTS
  • 1½-2 medium red onions, sliced
  • Avocado oil spray (to coat the pan)
  • 4-6 dashes of Maggi seasoning (or soy sauce)
  • ½ tsp ponzu sauce (if available)
  • 2 tsp Marmite (use no-beef bouillon if Marmite is not available)
  • 2 cups hot water
  • ¼ -½ tsp molasses
  • 1 tsp refined coconut oil
  • 1 TBSP cornstarch (if needed to thicken)
DIRECTIONS
  1. Spray pan with avocado oil spray
  2. Add sliced red onions
  3. Add Maggi and ponzu sauce
  4. Sauté onions until they’re lightly caramelized.
  5. Add Marmite (or no-beef bouillon) to 2 cups of hot water.
  6. Combine the onions, broth and molasses in a high-powered blender and blend until smooth.
  7. Reduce the gravy mixture in a pot with refined coconut oil
  8. Add up to 1 TBSP of cornstarch (if needed for thickening)
  9. Cook on the stove until the gravy reaches the desired thickness
  10. Serve and enjoy!
