Easy Vegan Peanut Sauce

You’ll draw people to your kitchen with the heavenly smell of this easy, versatile sauce.

I had a craving for peanut sauce and considered how I could make a simple sauce using some ingredients I had on hand.

Add mixed vegetables and serve over noodles or rice. Consider topping each serving with a tablespoon of shelled sunflower seeds and a tablespoon of hemp hearts for more protein. This made for an easy, satisfying dinner with left overs enough to feed my family two more nights.

INGREDIENTS

This recipe makes enough sauce for 1 lb of pasta and vegetables.

  • ½ cup peanut butter
  • 2 cans (15 oz) of diced tomatoes
  • 1 can (15 oz) full fat coconut milk
  • 3 TBSP vegetarian fish sauce
  • 3 TBSP lemon juice
  • 2 TBSP liquid aminos or soy sauce
  • 1 tsp Maramite in 1 cup of water or 1 cup vegetable broth
  • 2 tsp ginger
  • 2 tsp garlic
  • 1 tsp onion powder
  • ½ tsp basil
  • ½-1 tsp crushed red pepper flakes
  • ¼ tsp salt
  • 1 tsp brown sugar
  • ¼ tsp cumin
  • 3 kaffir lime leaves (optional)
  • fresh basil leaves (optional)
  • Shelled sunflower seeds (1 TBSP per serving)
  • Hemp hearts (1 TBSP per serving)
DIRECTIONS

The directions for the sauce are simple. Simply add the ingredients to a pot in the order listed (through fresh basil leaves) and stir them together over medium heat. Allow to simmer for 20 minutes or longer. Use the sauce as desired. Top each serving with shelled sunflower seeds and hemp hearts.
